8 Healthy and Quick Weeknight Dinners

Quick, homemade healthy meals and weeknight dinners – we all are looking for the secret, right? Seems like during the week I often struggle with keeping dinner fresh and tasty. We easily fall into a rut with our favorites, so it is time to shift things a bit.

Here are a collection of simple recipes to liven up your dinner hour and help you keep your sanity. I love using my Instant Pot – cooking up whole organic chickens that I find on markdown at my grocery store truly makes my heart SING! I am kind of funny that way, but saving money on our grocery budget and getting healthy real food that nourishes my family really makes me happy!
