Fed Up and Doing Something About It!

We have all been there, or at least I think so.

You get fed up with a few extra pounds around your middle or maybe several dozen extra pounds.

You know your body is not performing in a way you know it should, but you are also not feeding your body what it needs to work at its best capacity. That is me!

You think things will get better, you look for a quick solution, but still months later you feel down about how you look and feel.

Okay, back to the story of feeling blah about the body. I shared yesterday how I have finally reach the end point. No more waiting around, no more excuses, no more looking for the quick cure. I am jumping into a 30-Day Paleo Challenge and I am excited. As I write, I am on day 3 – so still fairly fresh in this adventure!

I read a book over the weekend, The Paleo Solution: The Original Human Diet by Robb Wolfand was quickly interested. I had heard bits and pieces about Paleo, but never had taken the time to really understand and grasp the information behind the new trend. Then I ran into this incredible site, Robin’s Sweet Confessions, where she posted pictures of before and afters of herself – I was taken back!

Her middle looked like my middle now! I want her “after” middle! Plus, she spells her 30 day Paleo challenge out so it is simple and easy to follow. Ladies, she tells you exactly what to do – what to drink, how much to drinkm and what to cook  – plus she gives you exercise videos to do too, all for FREE! Amazing! I am using her site as my guide and substituting some recipes until I get to the grocery store for next week.

As one with an autoimmune disorder, this really has my name written all over it. Not only do people who do not suffer from illness and health issues get better when eating with a Paleo approach, people who are healthy even feel better than they thought they ever could!

In the past few months I honestly have felt the best I have in years with the use of exercise, using essential oils, eating grass-fed meat, pastured eggs, and butter – but I know that there are still issues that could be helped with a Paleo diet.

But it is hard! Yep, honestly the first few days really stink! I love sugar and salty snacks. But you know what, I am tired of not following through and I know I will love success even more. Some of the best things are things you have to work really hard for! I can keep on complaining or actually step up to the plate and kick it in gear – so that is what I am doing.

I am going to share with you several recipes that I’ve already used that have been great and my family has loved.

Great Paleo Resources:

  • Emeals – They have a Paleo menu plan which makes things very easy. I just pulled up the new menu for this week and they have a yummy Chicken Curry recipe with Mango Cauliflower rice, plus a grilled Orange Salmon. {YUM!}
  • Well Fed – A great Paleo site and you can get a free 30 page PDF of their new cookbook! Some good recipes plus tips on how to make Paleo really work for you.
  • Balanced Bites – Great site. She has an awesome book I am thinking about getting, but even better some great printables to make eating and stocking your pantry super easy!
  • Paleo Mom – Oh my gosh, if you have a question, she has the answer! You will find all kinds of information here and recipes!
  • Whole9life – This site is incredible and has some printable forms that make it easy to see what you can and cannot eat!

To be honest and frank here, there are probably many of you who know a lot more about Paleo and Real Food eating than I do – especially at this point – so I urge you to share information in the comments. I have read on the autoimmune protocol, but for now I am not following that strictly – just adjusting to the normal Paleo. I am not a doctor nor a nutritionist, but I do like to encourage moms to take care of themselves and be the best they can be for themselves and their family!

Almond-Crusted Fish

Almond-Crusted Fish with Roasted Brussels Sprouts (Emeals)

  • 6 (6oz) halibut fillets or sub Tilapia (I used Tilapia, which I can get at my local grocery store at a great price!)
  • 1/2 teaspoon kosher salt  (I use REAL salt)
  • 1/2 teaspoon pepper
  • 2 large eggs, lightly beaten (I use pastured eggs from a local farm)
  • 1 cup Almond Meal (I purchased a 3 lb bag at Costco)
  • 2 Tablespoons olive oil  – you could use coconut oil too – I might try that next time

Preheat oven to 450 degrees. Sprinkle fish evenly with salt and pepper. Place eggs in a shallow dish, and almond meal in another dish. Dip fish in egg, and then dredge in almond meal. Transfer to a baking sheet rubbed with oil. Bake 10 minutes or until fish flakes with a fork.

There was an easy recipe for roasted brussels sprouts, which looked great, but we had fresh green beans from our garden.

Mushroom Beef Leftover Hash

I used another Emeals recipe this week, cooking this up on Friday even before I had decided to go Paleo and it was perfect too. It was a Mushroom Beef Roast, cooked in the Slow Cooker. It was delicious – then I took the leftovers and chopped them up with a cooked sweet potato and some leftover green beans and made hash. This was a great quick lunch and also breakfast.
