eMeals to the Rescue Again!

I’ve been sharing with you a bit about my journey since beginning a 30 Day Paleo Challenge last month.  I was thrilled when I heard from many of you who were going to give it a try too!  That is the best part, sharing in something together.

I am happy to say, I’ve managed to stick with it and am happy with the success I’ve had.  I am down 9 pounds and I know I’ve lost a few inches.  My clothes are loose and my endurance and energy is up!  The wonderful 30 Day Challenge that I was following over at Robin’s Sweet Confessions started as a great guide and then I was able to choose other Paleo meal choices as well as continue with my workout to train for my half-marathon next month in San Diego (so excited!)


One of my favorite recipes so far is one that I grabbed from my Emeals eating plan menu  {yes, they have a Paleo menu plan!}  The Basic Chicken Alfredo is yummy – plus it is quick and easy on the budget.  I made this the first time when I had my daughter home from college earlier this month (that is another crazy story – I was missing my daughter so much that I drove 5 1/2 hours to pick her up, drove 5 1/2 hours back home, had her home for a day and a half and drove her back 5 1/2 hours and then me back home 5 1/2 hours!  It filled my heart up big time!!)  

Oh, and to make things even better and more interesting, my daughter has decided to start eating Paleo as best she can in her dorm room – cooking up stuff in her crock pot!!  AWESOME – so if you think you can’t do it, I would differ with you!


I had roasted two chickens in my oven, which provided great chicken for this recipe, plus a chicken salad recipe from Robin’s 30 Day plan and some chicken soup – I will have to share that recipe too.  If you are trying your hand at eating Paleo, make sure you follow my PALEO board on Pinterest – I am always gathering great recipes – the Paleo Chicken Bacon Soup is a WINNER!


eMeals has made this whole Paleo thing much easier, I love that I can print out my menu and grocery list each week and not have to give it much thought.  Plus variety is the key to life – I can let someone else be the creative one too, if I am too busy to get my Pinterest on!  If you are not into Paleo – no worries – they have meal plan that will suit your taste – so many to choose from.  I particularly like the slow cooker plan – I can often substitute some ingredients which will make it Paleo friendly too.  Using the slow cooker this time of year is so nice!
